Punch-out method?

So I used to use this in my mods all the time, but I completely forgot how to do it and I'd like to be able to recreate those mods of mine (as I lost them when the website I had hosting them lost service indefinitely).

Any chance of someone creating a guide for this, as well as hex editing in general?

I just realized that this is probably in the wrong forum. It might be better off in the guides section, so if a mod could determine if this assumption is correct and move it there in the case that it is that'd be appreciated.
